Beef Tartar

"Tartar" goes back to the Tartars, who, according to ancient reports, are said to have put raw pieces of meat under their saddles, riding them crumbly and then eating them raw. Don't worry, our beef tartar is not prepared that way. For a good tartar, the quality of the meat is what counts most. It must be free of fat and tendon, fillet is particulary suitable.
